The goal of Community Education is to provide information, inspiration, and recreation in response to community need.  If there's a topic about which you'd like to learn -- or teach -- please call the Center!  Each semester there are classes in cooking, health, creativity, and a comprehensive computer series along with a wide variety of other classes.

 SUMMER 2008 COMMUNITY EDUCATION SCHEDULE

Summer is here and there’s never been a better time to take a class—there’s something in the schedule to
interest everyone!   Impress family and guests with new cooking skills and unique menu ideas; improve your health;
enhance business and computer skills; learn to meditate for relaxation and well-being; get creative; train your dog; and much, more!

COOKING CLASSES

 

SIZZLING SUMMER MENUS:  Eating is never better than in summertime!  Healthy foods abound; we’re entertaining; and outdoor cooking provides unlimited creativity, without heating up the house.  Chef Eric Peterson was trained and certified by the Western Culinary Institute. His personality, hands-on instruction, and innovative menus provide a fun, casual atmosphere. Bring a hearty appetite! Sessions include lessons and dining on a complete gourmet meal. Eric’s classes are popular for fun and camaraderie so come with a friend, but attendance is limited and cooking classes fill quickly. To avoid disappointment; register early.

NOTE: Please bring a hand-towel, chef’s knife, place-setting (and apron, if desired).

08-41:  Session I highlights Fish and Seafood with a menu that includes Grilled Clams with Linguini; Orzo Shrimp Salad with Pesto Vinaigrette; Scallop Skewers with Orange Saffron Aoli; and a selection of Eric’s special accompanying dishes.

Instructor Randy MacArthur grows pesticide-free foods, marketing them at the Alpena Farmer’s Market.  Randy brings a wealth of experience, knowledge and down-to-earth advice about wholesome home-grown foods, and cooking and eating for health without sacrificing flavor.

08-44:  GARDEN GRILL:  A healthy, delicious dinner menu prepared quickly, without heating up the house! Menu includes fresh-grilled pizza, grilled vegetables and a variety of other dishes to be chosen of seasonally available produce.

08-45:  THE GARDEN’S BOUNTY:  The focus of the second session is cooking with fresh herbs. Menu selections include fresh locally-caught fish; steak from local beef; herbed dip with fresh vegetable crudités; and a wilted salad of a variety of unusual fresh garden greens with herb dressing heated on the grill.

08-46: CUSTOMER SERVICE WORKSHOP

This highly-rated seminar is recommended for anyone who seeks to effectively navigate in a business environment with professionalism. Attendees will learn how to maintain personal composure, utilize good office etiquette and soft skills, how to take on leadership roles, and be responsible employees. Discover improved communication with customers. There is an emphasis on identifying and meeting personal goals. A variety of activities promote understanding of the competitive business world and how to effectively present your personal best for your company and yourself.

Instructor Nancy Seguin is an Alpena Community College staff member. She holds Bachelor of Science (Education) and Master of Arts (Counseling) Degrees from CMU.

HEALTH AND BEAUTY—INSIDE AND OUT—

 

THE ENLIGHTENMENT SERIES returns by popular request.  Take back your power!  Come and nourish body, mind, and spirit this summer.  You will benefit from all three in-depth 3-hour classes, but you may choose one or two.  Instructor Jan Robarge, with over 40 years experience studying nutrition, vegetarianism, and vegetarian cooking, has a passion for sharing her knowledge, especially relieving mysteries of protein consumption without meat and showing how easy and natural it is.  Jan has studied yoga, meditation, and other enlightenments with many international experts.

08-47:  THE HEALTHY VEGETARIAN:  How do you want to arrive at "old age?”  Learn how the vegetarian lifestyle creates vibrant, youthful health.  With greater emphasis on PH balance and alkalizing your system, we'll examine the effects of using animal products and offer alternative suggestions and tips on how to proceed.  You will be surprised how easy and delicious it can be.  Bring your appetite! You won't be able to resist the many samples!

08-48:  ENERGY WORK/GREEN COMMUNICATION:  A co-creative partnership with nature.  Unlike any other, in this class you can learn to experience and influence energy, energy-clearing, and Kinesiology.  We'll explore the works of Machaelle Small Wright and her MAP (Medical Assistance Program).  Discover how you can work together with Nature and The Great White Brotherhood to create your very own MAP team.  This is a healing modality unlike any other.  It is truly an honor and a blessing to use it, and it is all your own!

08-49:  MEDITATION:  Discover the benefits of this ageless discipline; whether your desire is for relaxation and stress relief, or you wish to delve deeper to access your inner power or reach a higher state of consciousness.  Class includes breath-work as well as Chakra clearing techniques.  We will do guided meditation, but the emphasis is teaching you to get “into the zone" by yourself.

AGING GRACEFULLY AND BEAUTIFULLY Most of us are completely confused by products and techniques claiming to help aging skin. Come and discover for yourself how to make the best choice for your skin and lifestyle. Register for one or both of these classes to learn the latest innovations and advances in skin management.

08-50: Part I: A fun and interesting class on age management for your face. Study the alternatives available with facial peels; LED; Belavi, and microderm techniques. Compare and contrast methods to learn what’s most appropriate for you. There will be demonstrations of peels and LED on volunteer models from the class. Ample question and answer period provided with lots of discussion.

08-51: Part II: Age Management for your body; it isn’t just for your face! The skin on your body is equally important and exhibits signs of aging damage. In this class, learn to maximize the benefits of aromatherapies, breathing, and self-massage techniques to look and feel your beautiful best.

Instructor Sandra Donovan, owner of Donovan’s Serenity and Wellness Salon, has an extensive background of experience, training, and certifications in skin care, aesthetics, and cosmetics. Sandra has taught a variety of workshops providing a wealth of information on all aspects of skin care and make-up. Sandra will be assisted by staff.

 

 

EXPLORE YOUR CREATIVITY

08-52: JEWELRY MAKING

Making jewelry is popular and fun! If you’ve seen handmade pieces you wished you could make too, come and learn—you can create and design necklaces, bracelets, and earrings for yourself or to give as gifts. All tools, equipment and materials are provided. We’ll create a light, pretty summer necklace using a choice of beads in beach-glass colors of aqua and green, pearls, or seasonal pastels. Take home new skills and a personal creation to wear or give. There will be lots of discussion and ideas. These classes are fun—come with a friend, but class size is limited to provide for one-on-one work.

Kate Bruski demonstrates techniques and materials for making beaded jewelry as well as many designs as examples. She has created hundreds of pieces and enjoys experimenting with styles and combinations.

08-53: SPECIAL-OCCASION FLOWERS AND DÉCOR

Join us for an evening of ideas and design inspiration on how to plan and decorate for a party, wedding or other special occasion. Paul Gordon, co-owner of Flowerland Designs of Alpena, shares insight and ideas for easily coordinating table and room décor to make your event beautiful and memorable. Discussion will include table linens, color coordination, themes and much more, including beautiful florals that Paul will create during class.

Instructor Paul Gordon recently celebrated his second year in Alpena after many years of creating beautiful florals for events in Las Vegas and New York City. Paul has designed exclusively for many high profile clients including Elizabeth Taylor, Donald Trump, Gladys Knight and others. He brings style and sophisticated ideas incorporating innovative and traditional floral design.

08-54: PEST CONTROL FOR YOUR GARDEN

Keep deer and bugs out of your garden and protect your investment. Whether you struggle to keep four, six, or eight-legged critters out of your garden, this class brings valuable information to minimize invasion by pests and maximize your garden’s beauty and production for you.  Learn pros, cons, safe use of chemicals, and alternative methods for natural control.  

Randy MacArthur began his career in the landscaping business before opening and operating MacArthur Nursery for 15 years. He taught a variety of gardening classes at the nursery and now brings his experience and knowledge to Community Ed at ACC. Randy continues to grow pesticide-free foods, marketing them at the Alpena Farmer’s Market.

08-55: TRAIN YOUR DOG WITH PSYCHOLOGY

All dogs have a desire to please their owners, but have difficulty following the signals we give. Learn how to teach your dog in ways they can understand. Learn techniques for eliminating bad habits and reinforcing good behavior. The first class is instructional; the second night owners will bring in their dogs to work with them. The last night will be review and reinforcement. Class is limited to 10 participants.

PHOTOGRAPHY AND DIGITAL CLASSES—

 

Photography instructor Tom Sherrill-Mix has been working in the field for 15 years and teaching photography at ACC for ten years. He was formerly employed by Northern Exposure as a photographer and darkroom technician. Tom now has his own business, called Third Eye Photography.

 08-56: GENERAL PHOTOGRAPHY

Whether you are a relative newcomer to photography or would just like to improve your skills, this class will provide insights, ideas, tricks and techniques to better photography.  Participants will learn camera functions, how to use and understand scene modes, basic photography principles including: shutter, ISO and aperture, and composition fundamentals through hands-on examples, indoors and outdoors.  Photos taken during class will be viewed and discussed as part of the learning process.  NOTE: Ownership of a camera is highly recommended.

DIGITAL PHOTOGRAPHY

08-57: BEGINNING DIGITAL PHOTOGRAPHY

Learn the basics of how to pick a camera, common camera features and what they do, and what to do with digital pictures. Class also covers some photography basics. You do not need to own a camera to benefit from this class. It is a great class to take if you plan to purchase a camera but don’t know what to get.

08-58:  INTERMEDIATE DIGITAL PHOTOGRAPHY
For students with some limited knowledge of digital cameras. Learn how to take advantage of features available on digital cameras and some editing skills. It is recommended you own a digital camera to benefit from this class.

08-59: ADVANCED DIGITAL PHOTOGRAPHY

08-60: PHOTOSHOP BASIC

Instructor: Brendan Fleishans

This is a beginner's course in Adobe Photoshop covering basic image-editing techniques. Learn to navigate the Photoshop window, use palette controls; archive techniques to preserve picture quality; and resize pictures to attach to e-mail messages.  NOTE: Prerequisite: Computer Basics class or equivalent knowledge. 

Consider combining the PhotoShop class with Digital Photography or PowerPoint to learn a useful set of interdependent skills. These skills are also useful for including photos of items to sell on e-Bay.

COMPUTER CLASSES

 

Each semester a variety of basic computer classes are included in the Community Ed schedule. They are designed to fulfill a range of needs. Whether you are a newcomer or a long-time user seeking enhanced job skills, you will benefit from one of the following classes. Each offers an introduction to a topic and tools to build proficiency.

Instructor Brendan Fleishans teaches computer classes for both Community Education and the Association of Lifelong Learners, in addition to tutoring. He is certified in Microsoft Word, PowerPoint and Excel. Brendan is a popular, conscientious instructor and noted for clear, practical, well-paced instruction.

 

08-61: ALL YOU NEED TO KNOW ABOUT PURCHASING A COMPUTER

Buying a computer doesn’t have to be a complex technical process. With basic knowledge of the more important components, you can purchase the perfect computer that will suit your personal needs! Course topics include: basics of computer hardware, differences between a Mac and a PC, brands/manufacturers, and how to customize your order from a vendor.

08-62: BASIC COMPUTER USAGE

Overcome fear of computers with instruction and guided practice. Designed for beginners, this comprehensive 4-part class covers basic skills. Learn computer components, keyboard, mouse operations, desktop icons, and menu items. Become familiar with different applications of your computer with emphasis on internal browsing, file management, Internet browsing and composing, receiving, forwarding, and responding to e-mail messages. Learn simple word-processing skills with WordPad. NOTE: This class is the prerequisite for all other computer classes in this series.

08-63: INTRODUCTION TO KEYBOARDING

Tired of “hunting and pecking” your way around the keyboard? Would you like to be able to type without having to watch the keyboard? Then this is the class for you! This course is designed specifically for beginning keyboard users, and will help beginners learn keyboard basics through instruction and exercises. Prerequisite: Basic Computer Usage class or equivalent knowledge.

Once you’ve mastered computer basics you’ll want to learn this valuable and versatile program. Word 2007 becomes your typewriter as you create and manipulate work. Learn to navigate The Ribbon and Windows to create professional-looking documents. Gain basic skills necessary to open, close, save, print, format, and edit documents. Other topics include cut, copy and paste; using Microsoft Help; and using different views. Prerequisite: Basic Computer Usage class or equivalent.

Learn to create basic presentations for customers, employees, management, or students.  In this workshop you’ll learn the skills necessary to begin effectively creating presentations. Add and delete slides, add transitions, sounds, animations, text effects, clip art, and pictures. Change views and slide layouts, view slide shows, and print note pages and presentations.  Prerequisite:  Basic Computer Usage class or equivalent knowledge.

This beginner’s class helps you master the basics of creating spreadsheets using Excel 2007.  Learn to create and format simple spreadsheets and calculate data using simple formulas and functions.  Other topics include entering, selecting, moving, and copying data; inserting and deleting columns, saving workbooks and basic toolbars. Prerequisite:  Basic Computer Usage class or equivalent knowledge.
